Tom’s vegetarian risotto featured in food magazine

Tom Barber, our Head Chef here Mellington Hall Hotel has been featured in the latest issue of Harlech Food Service magazine presenting his mouth-watering vegetarian Risotto.

Tom chose a vegetarian dish despite the fact that, as he says, “I can look out of my kitchen window now and see the beef that I’ll be serving weeks or months from now grazing in the fields not a hundred yards from where I’m standing.” The main ingredients of his dish are Spinach, Asparagus and Blue Cheese. “On the plate it looks fresh and vibrant and it surprises diners. I like to think the colours reflect the stunning countryside which surrounds Mellington Hall. The dish has a rich flavour and is quite substantial but isn’t too heavy so customers can indulge themselves with some dessert afterwards without feeling too guilty.”
